Second Thoughts: Pineapple/Apricot Bundt Cake

If you haven't noticed, yes, I have changed my blog background AGAIN.

I am just not keen on dark colors. Dark colors seem to deter from the story.....

Does anyone else think that way?

This is pineapple/apricot bundt cake.

Easter at Grandma's house last weekend.

And you're thinking, Easter was over two weeks ago, right.

Well, when you're a grandma, and your kids have kids, you have to adjust to everyone else's schedule.

And I found out quickly, everyone else's tastes.....

As I was standing in the middle of my kitchen with lemon cake mix in hand, it dawned on me that my son doesn't like lemon (the recipe called for lemon cake).

And a mother CANNOT let her children down.

Right?

Right!

So I had to come up with a solution to this dilemma.

Think quickly MOM.....

As I stuck my head inside my cake mix cupboard, I returned with a pineapple cake mix.

Pineapple in place of lemon.

Perfect solution, and my son loves pineapple.

This is Ashton

He is at that age where he absolutely cannot be seen having fun, or smiling, for that matter.

But you will soon see that I tricked him.

This is Lydia

She is smiley, smiley (all the time)

And she loves having her picture taken.

She entered Grandma's house in a beautiful sun dress, new shoes, a gorgeous necklace, butterfly earrings, and primping and posing and bragging all the way to the dining room (while smoothing her hair).

Little girls love to soak up the, "Oh, you are so pretty" comments.

She is beautiful, don't you think?

See, there is Ashton being all serious again. There is no way he can have any fun coloring Easter eggs.

Nope, out of the question....

But then there is smiley that makes up for it.

After coloring Easter eggs, we escaped outside for some play time.

Do you see that?

Ashton is smiling.....and he has no idea I'm taking his picture (I tricked him).

I took the outside pictures from my front porch without the kids knowing.

Opps!! He's smiling again. And having fun.

I love action shots.....

It is not very often I ask for the help of a cake mix.

Only if it is good.

And this is good!!

Pineapple/Apricot Bundt Cake

1 (18.25 oz.) package pineapple cake mix
1/3 c. sugar
1/2 c. vegetable oil (canola)
1 c. apricot nectar
4 eggs
1 c. confectioners' sugar
2 TBS pineapple juice

Grease and flour a 10 inch tube pan. Preheat oven to 325 degrees F.
Combine cake mix with sugar, oil, and apricot nectar. Beat for two minutes with mixer on medium speed. Add eggs one at a time, beating 30 seconds after each addition. Pour batter into prepared pan.
Bake for 50 - 60 minutes. Cool for 10 minutes in the pan before turning out onto a plate.
In a small bowl, mix confectioners' sugar with pineapple juice until you reach desired consistency. Drizzle glaze over sides of warm cake.

The woman in Proverbs is not a description of how women should be, she is an inspiration to be all you can be. In our society today, physical appearance means everything. The woman in Proverbs has outstanding abilities, but it is obvious that her family is very important. Do not see a woman only for her physical appearance, see her instead by placing her attractiveness through her character of how she directs her family's social position.
