Weather Change: Chicken Noodle Soup

Winter is on its way, and there is nothing we can do to stop it. Ok, we have the option to move....

Someplace warm like: Arizona, Florida, California, etc...

I love the snow, but I love it from inside my warm house.

There is nothing more enjoyable than watching it snow from a couch and a nice warm blankie.

Another problem I have when the weather starts to get colder is, I hate to give up my capri pants and flip-flops....My comfortable dress is changing into heavy sweatshirts, long pants, and the ever pain-in-the-butt socks and shoes.

But there is one good thing that winter brings my way.....SOUP!!

Soup is one of my favorite foods.

The broth is warming and comforting, big chunks of veggies are healthy, and a soup can be created with just about anything you have on hand.

Since the weather is turning colder, I had a huge urge (craving) for home-made chicken noodle soup. Bite sized pieces of chicken (I used boneless skinless thighs), bite sized pieces of fresh veggies, and the soothing chicken broth.....YUMMM-O

Is there anything better? I think not...


One ingredient that I absolutely cannot live without in my house is soup base.

And yes, I have soup base for chicken, pork, and beef.....Does that consider me to be a hoarder?

I hope not; I hate that show, but it is one of those shows that just draws you in and you can't quit watching once you start....I just don't understand the illness.

Research baby, research....

But anyway, back to the soup base. It has so much more flavor than just bullion. It is made for soup!!

This is another dish that I created to share with my daughter and her family, so this recipe is going to be large.

All you have to do is, make it and share.....simple solution.

Home-made Chicken Noodle Soup

This is what I did:

14 c. water
salt
4 lb. boneless skinless chicken thighs (cut into bite sized pieces)
5 TBS chicken soup base
2 tsp. celery salt
2 c. sliced carrots
1 c. chopped onion
fresh ground black pepper
1 pkg Ronzoni Healthy Harvest Whole Grain Noodles

Bring salted water to a boil and place chicken pieces in boiling water. Turn temp to medium, cover and simmer for about 1 hour.
Add soup base, celery salt, and pepper.
Bring liquid back to a boil uncovered, add carrots and onion. Lightly boil until carrots are tender (about 10 to 15 minutes).
When carrots are tender and soup is still boiling, add noodles and cook according to package directions. When noodles are cooked, eat and enjoy.
