Spicy Apple Gingerbread

Gingerbread around the holidays is what makes a holiday, the scents, the spices, the flavors....

I just had to try this one. Spicy Apple Gingerbread

I had some apples that needed used up, and how could they be any better than in a gingerbread (with whipped cream on top).

I found this recipe in Cookbook 25 Years Women of the Farm Bureau.

Who knows how to cook any better than Farm Women?

That is where I learned how to do my cooking and baking, from my farm binded grandmother.

I never ever saw her use a recipe.

She threw things together and everything she made tasted wonderful.

You will find out further down in this blog post that I just haven't mastered the throw together technique, but I am working on it.

I am going to put this recipe together like I am going to make it the next time, and there will be a next time. This bread is the bomb if you like gingerbread.

2 1/2 c. sifted flour
1 tsp. baking soda
3/4 tsp. salt
2 tsp. cinnamon
2 tsp. ginger
1 tsp. ground cloves

Sift together flour, soda, salt, and spices. Set aside.


1 stick butter
1/2 c. sugar
1/2 c. brown sugar
3 eggs, beaten
1 c. dark molasses

In separate bowl, cream butter and sugars until light and fluffy. Beat in eggs, then molasses.

In a measuring cup measure 1 c. buttermilk.

I wanted more apples added to my bread, and this is where the "just dump" comes into play.

The original recipe called for 1/4 c. water. What high content do apples hold?

WATER!!

So not thinking I added the extra apples and water. I should have taken out the water addition. But everything was good. EXTRA, EXTRA moist, but good.

Nutrition Information for Apples:

The following nutrition information is for one medium apple. That would be an apple of about three inches in diameter, or 138 grams. This general information is for all types of uncooked apples and includes the skin.

Macronutrients:

Water: 118.07 g <-------- See that right there? WATER!!

Calories: 72

Protein: 0.36 g

Carbohydrates: 19.06 g

Fiber: 3.3 g

I shredded two medium apples.

Shred the apples and add 1 tsp. lemon juice.

Gradually add dry ingredients alternately with buttermilk, mixing thoroughly after each addition. Fold in shredded apples and lemon juice. Pour batter into 2 greased loaf pans. Bake 350 degrees F. for 40-45 minutes, or until toothpick comes out clean.

This bread is very, very good.

All the gingerbread spices are there.

Top with whipped cream, take a bite, and beware of your eyes rolling to the ceiling, with a melting sensation taking over your body.....Just say'n.

Once upon a time there was a little old woman and a little old man. The little old woman thought she'd make a gingerbread man. She rolled out the dough, and cut out the shape, and she put raisins for his eyes, and peppermints for his teeth, and put icing on his head for the hair. Then she put him in the oven, and when it smelled good, she opened up the door to take a peek and out jumped the gingerbread man.


"Stop! Stop, little gingerbread man!" said the little old lady. "I want to eat you!"
"No!" said the little gingerbread man. "I can run away from you!"

"Run, run, fast as you can!
Can't catch me, I'm the gingerbread man!"

And away he ran!

He ran till he got outside, where he saw the little old man. And the little old man said, "Stop! Stop little gingerbread man! I want to eat you!"

And the little gingerbread man said: "NO! I ran away from the little old woman, and I can run away from you too!

Run, run, fast as you can!
Can't catch me, I'm the gingerbread man!"


and away he ran!

He ran till he came to the pigsty. And the pig said

"(Oink Oink)-- Stop! Stop little gingerbread man! I want to eat you!"

But the gingerbread man said, "NO! I ran away from the little old woman, I ran away from the little old man, and I can run away from you too!

Run, run, fast as you can!
Can't catch me, I'm the gingerbread man!"


and away he ran!
